Countermoon Pies

6 graham crackers (broken in half)
1 sm jar fluffy marshmallow stuff
1/2 cup hazelnut, almond, cashew or peanut butter
1 - 12oz bag of chocolate chips
1 tbl Frangelico or Amaretto liquor
OR
1 1/2 tsp vanilla extract

Spread nut butter on 6 of the graham cracker squares. Spread a generous dollop of fluffy marshmallow stuff on the remaining 6 graham cracker squares. Make 6 sandwiches. set aside.

Now, temper some chocolate.. it's easy.

Melt completely 3/4 of the chips... double boiler works best, but you can use a microwave. After they're melted, stir in the liquor or vanilla, and half of the rest of the chips, little by little, until they're melted, too. Eat leftover chips.

Immerse each sandwich in melted chocolate, completely enclosing sandwich. Let chocolate harden, either at room temp or in refrigerator.

Serves 6, or 1, to dispel sudden craving for gooey food. Goes well with Fine Colombian
